White BBQ Sauce Ingredients
- 2 cups Blue Plate mayonnaise
- 2 tbsp spicy brown mustard
- 2 tsp prepared horseradish
- 1⁄2 cup cider vinegar
- 1 tsp garlic powder
- 2 tsp black pepper
- 1⁄4 tsp kosher salt
- 2 tbsp brown sugar
- 1⁄2 tsp Worcestershire sauce
- 1⁄4 tsp cayenne pepper

- 5 lb jumbo chicken wings
- 2 cups whole milk Greek yogurt
- Zest of 2 lemons
- 3 cloves garlic, minced
- 1⁄2 cup chopped flat-leaf parsley
- 1⁄2 cup MGSC Creole Spice Blend

Step-by-Step Instructions to Make Grilled Chicken Wings with White BBQ Sauce
Step 1: Marinate the Wings
In a large mixing bowl, combine yogurt, lemon zest, minced garlic, parsley, and Creole spice blend. Add chicken wings and toss to coat evenly. Cover and refrigerate for at least 2 hours, or overnight for deeper flavor.
Step 2: Prepare the Grill
Light the lump hardwood charcoal using a chimney starter. Once coals are white-hot, spread them evenly on one side of the grill to create a two-zone setup (direct and indirect heat). Preheat the grill with thedome closed until temperature reaches about 400°F.
Step 3: Grill the Wings -
Grill wings directly over heat for 3–4 minutes per side to develop char, then move to the cooler side of the grill. Cover and cook for another 15–20 minutes, turning occasionally, until wings reach an internal temperature of 165°F and crisp on the outside.
Step 4: Make the White BBQ Sauce
In a separate bowl, whisk together mayonnaise, mustard, horseradish, vinegar, garlic powder, black pepper, salt, brown sugar, Worcestershire, and cayenne until smooth and creamy. Adjust seasoning to taste.
Step 5: Serve
Remove wings from grill and let rest for a few minutes. Toss in or serve alongside the white BBQ sauce. Garnish with fresh parsley if desired.
